Audio of the late Catriona MacNeil from Bruernish in Barra giving the inside story of puddings is that latest addition to the Tobar an Dualchais ~ Kist o Riches website.
In a recording dating back over half a century, Catriona (1898-1980) lifts the lid on traditional marag-making.
The audio archive site says: “In this recording from 1970, she describes the process of making puddings, including the cleaning of the sheep’s intestines, the recipe for black and white puddings, and how the ingredients were stuffed into the intestines and sewn up.
"She also tells how they were cooked in hot water and pierced periodically to prevent the skins bursting in the hot water.”
Mary MacDonald of the School of Scottish Studies conducted the interview.
