This week at HarbourSeafoods: Skate!

Skate wings are a delicious delicate tasting fish and are easy to cook! A simple method is to coat the skate wings in flour which has been seasoned with salt, pepper and dill (dried or fresh). Then just gently shallow fry them in butter or oil until golden brown, turn over so cooked on both sides. Serve with a wedge of lemon. 

There are many other recipes to try such as roasted Skate Wing with Leeks and Samphire or Skate with Chorizo, olive and onion Sauce or just simply battered Skate - why not give it a try.
